This contribution is from my friend, Desiré Volkwijn. Although we have not seen each other for several years, my memories of Desiré and her husband Kay-Robert are one of warmth and caring.

They were the family we did not have when we moved to Kansas from SA in 1996. Being fellow South Africans, the Volkwijns befriended us and helped in our settling down in a new country and city. We remember, with appreciation, their warm hospitality.

Desiré has had a long career in education. In her retirement she is very active in the church. She served three years as elder and also belongs to a few committees at her local church.

Her interests are gender issues, travel and reading. She also enjoys knitting and some crochet work. Desiré has always had a passion for writing and is now rekindling this talent. She has had one poem and one story published online in South Africa. She is getting ready to submit a new publication very soon.

I remember eating several delicious meals at the Volkwijn home. Upon recently learning that she is gluten/wheat intolerant, Desiré has taken steps to eat the correct food for her health condition. This included collecting gluten free recipes. Do try one of Desiré's favorite recipes, especially, if you too are gluten intolerant. This recipe which yields about 4 dozen cookies, follows:

INGREDIENTS

  1. 1½ cups gluten free all purpose baking flour
  2. 3 cups gluten free rolled oats
  3. 1 cup butter or margarine(softened)
  4. 1 cup brown sugar
  5. ½ cup granulated sugar
  6. 1 teaspoon vanilla essence
  7. 2 large eggs
  8. 1 teaspoons bicarbonate of soda/baking soda
  9. 1 tsp. cinnamon powder
  10. 1 tsp. Xanthan Gum
  11. 1 cup raisins(unsulfured)
  12. ½ tsp. salt

METHOD

  • Pre-heat oven to 350°f. Beat butter & sugars together until smooth
  • Add eggs & vanilla essence: beat well
  • Blend flour, cinnamon, baking soda, salt and Xanthan Gum in a separate bowl
  • Stir blended flour mix into wet ingredients. Add raisins & oats, mixing all ingredients
  • Drop rounded tablespoons of dough onto un-greased cookie sheet
  • Bake for 10-12 or until it is golden brown
  • Cool for a minute, then set on a wire rack. Enjoy
