Chicken Curry

The recipe for Chicken curry has been submitted by my friend, Vanitha Naicker, fondly known as Vani, by friends and family. She is a caring young woman who is charming, and always ready to help.

She also enjoys the outdoors and has a wonderful sense of humor. Vani loves to cook, among many other interests. She hosts social events for friends and makes delicious meals. She kindly shared a few of her recipes.

Vani prefers to mix her own masala/curry powder. The recipe for spices to be used for chicken curry listed on the right.

Here is Vani's recipe for Chicken Curry



Ingredients

  • 4 pounds chicken
  • 1/2 chopped yellow onion
  • 1 chopped tomato
  • 1 tsp. ground ginger
  • salt to taste
  • ½ cup peas
  • 3-4 cloves of garlic, crushed
  • Pour oil, ¼ of an inch, that covers the surface of your pot

Method

  • Wash & all fresh ingredients, cut/slice/chop as listed
  • Prepare chicken, cut into bite sized portions
  • Heat oil. Add cinnamon stick, cardamoms, anise & fennel seeds. Sauté for a few seconds
  • Follow with chopped onions
  • When soft add tomatoes, garlic & ginger. Blend ingredients
  • Follow with 1 ½ tblsps. of Vani's Masala. Stir, then add peas
  • Include some water to help soften the peas. Lower the heat, close the lid
  • After 20 minutes, add the chicken & salt. Blend contents. Add 1 cup of hot water
  • Cook until peas are soft and chicken is tender
  • Garnish with cilantro. Serve with Basmati rice or parboiled rice

Spices/Vani's Masala

  1. 1 tbls cumin powder
  2. 1½ tbls coriander powder
  3. 3½ tblsps. chili powder
Blend these 3 ingredients & use as listed in, method
  • The ingredients that follow can be added in varying proportions to a number of recipes
  • As listed here,the amounts are for Vani's Chicken Curry
  • 1 stick cinamon (optional)
  • 2 cardomom pods
  • Anise seed, split
  • 1 tsp. fennel seeds
  • A few sprigs of cilantro for garnish







Vani's Quick Salad

  • Wash all ingredients described
  • Scrape & grate 3 medium carrots
  • Onion, finely slice to make ½cup
  • Slice half a lettuce
  • 1 large tomato, cubed
  • Mix. Sprinke with white balsamic vinegar

Vani suggests packing together the 3 spices for Masala, for convenient use. All the spices she has used are available at some regular supermarkets. You will be sure to find them at ethnic grocers.

Her salad provides a cool contrast to the spicy chicken. More recipes from Vani will be published soon.
