Simple Chicken Pie

Cultural and religious events center around family. A big part of those events is being together and enjoying good food. INGREDIENTS

  1. 2 rolls of Puff or Flaky pastry
  2. 3 chicken breasts
  3. 1 punnet mushrooms
  4. 2 tsps. whole jeero (cumin)
  5. 1 tsp ground peppercorns
  6. ¼ cup sago (small tapioca)
  7. 1 green chilli or crushed chillies, (to taste)
  8. 1 onion (chopped)
  9. 3 cloves fresh garlic/15ml garlic paste
  10. 2 tblsps. cooking oil
  11. 1 tsp. salt, (to taste)
  12. 1 tblsp. Chicken flavored Royco soup*(mix with a little water), optional
  13. Egg-wash to brush pastry

Method

  • Soak sago in half a cup of water and keep aside
  • Rinse chicken, boil and flake
  • wash all vegetables, and slice
  • Heat oil in a saucepan with jeero, (cumin), until it sizzles, (not brown)
  • Add onion and cook until glossy
  • Add chicken, garlic, salt & chili. Let it simmer
  • Follow with mushrooms, pepper & sago
  • If the contents appear to be getting dry, add a littl more water
  • Cook until sago is transparent & the water evaporates
  • Allow filling to cool completely
  • Roll out 1 piece pastry and cover bottom of an oiled baking dish
  • Put cooled filling on top
  • Roll out 2nd. piece pastry and cover chicken
  • Make slits in pastry so that steam escapes while baking
  • Bake at 220°C., for about 10 min.
  • Brush with beaten egg and lower heat to 200°
  • Bake until done, (until brown)
  • Remove from oven, allow to cool, then slice and serve

* if you are unable to get the brand, Royco, use any brand of chicken or other flavored soup. If you prefer to make smaller portions of chicken pies, simply cut the pastry into the sizes that you prefer. Then add filling in proportion to the size of pastry. You may purchase sago at regular or ethnic grocery stores.
