Goni Vadachia

This recipe is from my friend Goni Vadachia from Verulam, South Africa. She attends meditation classes in Raja Yoga at the Brahma Kumari Center. Her tutor, a gentleman from the Netherlands always serves delicious baked treats at the end of the sessions.

Everyone enjoys these treats which are also egg-less. Goni acquired a few of the recipes which she kindly shared with me. The recipes sound so yummy. I plan to try them soon.

Please note that some of the ingredients described may also be know by other names, for example cake flour is the same as all purpose flour. Castor sugar is the same as Bakers Sugar. You can easily make your own Castor sugar. Just grind regular sugar in a coffee grinder. The fine particles dissolve quicker in the baking process.

INGREDIENTS

  1. 3 cups cake flour
  2. 2cups castor sugar
  3. 2 teaspoons baking powder
  4. 2 teaspoons bicarbonate of soda
  5. 2 Tablespoons ground cinnamon powder
  6. ½Tablespoon Elachi, (cardomom)powder
  7. ½ Teaspoons nutmeg powder
  8. ½Teaspoon clove powder
  9. Pinch of salt
  10. 2½ cups of butter milk (can use maas/yogurt)
  11. 1 teaspoon vanilla essence
  12. 2 Tablespoon oil
  13. 110 gram butter or margarine

METHOD

  • Mix dry ingredients
  • Melt butter, mix with oil, then pour into dry ingredients
  • Stir in yogurt and blend with rest of ingredients
  • Mix all together & pour into large baking tray or over tray
  • Bake at 180 ° Celsius/400°F. for approximately 30 minutes
