Penne Pasta With Tomatoes & Mozzarella Cheese

Meet Darshan Pather, my second son, a handsome, eligible bachelor. He works a full day & and has recently gone back to school for a graduate degree.

His favorite sport is tennis. He also enjoys working out, as he believes the effects of a good work out session leaves one feeling euphoric & relaxed. He recently began training for a half marathon but an injury prevented him from further training. He hopes to get back to running as soon as he has healed and has some time between his studies & other responsibilities.

He also enjoys watching movies and has recommended a few good movies to me. He was an extra once in the movie Joe Somebody. He has a wonderful talent for imitating people.

This young man cooks his own food most of the time. He saves money by shopping for good deals at stores with competitive prices & good quality produce. He enjoys cooking and finds that it saves money to eat at home & to take his own lunch to work. Of course he does eat out, but makes efforts to curb high expenses.

He is adept at cooking a number of dishes. His lasagna and vegetarian burgers are most delicious and enjoyed by all the family. In fact, his vegetarian burgers are much more popular than my version. These recipes will be published shortly.

Many of Darshan's recipes are quick & very easy to make, as he is also a part-time student and cannot afford the time to labor in the kitchen.



INGREDIENTS

  • 2 ¼ cups Penne Pasta
  • 10 oz. fresh mozzarella cheese (drained)
  • ¼ cup. olive oil
  • 1 pound Roma tomatoes
  • salt to taste
  • 2 tablespoon balsamic vinegar
  • 15 chopped basil leaves & a few more for garnish
  • Sprinklings of ground black pepper
  • f 1 lemon for zest & juice
  • 2 tablespoon fresh Parmesan cheese (optional)

METHOD

  • Wash basil leaves, tomato & lemon under running water
  • Boil Penne Pasta according to directions on package
  • Add salt ½ teaspoon olive oil to boiling water. Stir to avoid sticking
  • Dry lemon. Use a lemon zester or a small knife to finely scrape off outermost part of lemon skin. Avoid white pith as it is bitter. Then squeeze lemon for juice
  • Dice tomato into small pieces. Then cut mozzarella cheese into similar size as tomato
  • Mix together olive oil, shredded basil, balsamic vinaigrette, 1 tblsp. lemon juice, lemon zest salt and ground pepper. Add tomatoes & mozzarella cheese: leave aside while pasta boils
  • When pasta is still tender, drain in colander & add to tomato mix.
  • Mix well, garnish with basil leaves and serve immediately. Add Parmesan cheese if desired
  • Serve with a side of green salad and garlic bread
