Ruth Alexander is a friend I met a few years ago. We have a common tie, in that we are both South Africans, living in the United States. Ruth is the mother of 2 very talented children, academically and in the arts.

Ruth kindly contributed a recipe that she loves to make for her daughter, Alexandria. Ruth makes her Dosa with brown Basmathi rice. White rice is acceptable as well. Generally people leave the batter to ferment overnight but Ruth uses the batter after about 4 hours of soaking. She serves this with coconut chutney. You may use any variety of fillings you care for. Potato curry is a popular filling. See recipe below


DOSA

INGREDIENTS

  • 1 cup urad dhal (a type of lentil)
  • 2-3 cups rice
  • 1tblsp. toovar dhal(also know as tuvar and pigeon pea lentil)
  • 1tblsp. salt

METHOD

  • Soak all the lentils for 3-4 hours. Then pulse in food processor
  • Heat a pan on medium heat without oil
  • Take a spoonful of batter & place in center of heated pan
  • From center go clockwise to the end, spreading batter as if making pancake (it should be thin)
  • Use olive oil around the edges & apply oil around complete dosa
  • Flip it & cook the other side.

coconut chutney

INGREDIENTS

  • ½ cup unsweetened coconut
  • ½ tsp. salt
  • juice of ½ lime
  • 2 green chilies
  • a stick of fresh ginger
  • ½ cup cilantro

METHOD

  • Rinse cilantro under running water and spin in salad spinner to remove excess water
  • Pulse all ingredients in a food processor
  • Remove and fill in Dosa & enjoy

More About Ruth

Both Ruth and her daughter, Alexandria, are graduates of the Bharatanatyam style of Indian dance since 2002. Ruth adapts “Indian Classical Dance” to western/gospel themes and has put on many performances for the community where she lives. She has a very strong concern for the elderly and regularly takes her shows to venues where the residents of retirement homes are entertained. Her son Alexander who plays the Mridigam (drums) often performs with his mother and sister

Ruth is busy with family matters but plans to get back to her career as a Fashion Designer in the very near future. He husband, Daniel is very supportive as well & they see their priorities as the well being of their children.
