The Malaysian Noodle dish was introduced to me by my sister-in-law, Sova Pather. She is a very caring mother & wife who loves to cook for her family. She enjoys trying out new recipes and experiments with various ingredients. She gives credit to Ken Horn, the creator of the original recipe for Malayasian Curry Mee,(Noodles) Recipe.

Sova cooked the Malaysian Noodle Curry for us when we visited her recently. Everyone enjoyed this delicious, exotic looking, very nutritious, yet easy to make dish. She served it with a salad that was a nice complement to the spicy, rich noodles.

I have strayed a little bit from Sova's excellent recipe, just reducing the amount of chili powder, to ensure that the dish is palatable to most tastes.

INGREDIENTS

  1. 8oz. tofu
  2. 1½ tblsp. ground nut or sesame oil
  3. 2 dried chilies, split in center
  4. 4 oz. noodles
  5. 4 oz. onion, sliced
  6. 1 tblsp. chopped garlic
  7. 1 tsp. chili powder, (less if you do not like spicy foods)
  8. ½ tsp. turmeric powder
  9. ½ tsp. each, coriander & cumin powders
  10. 1 tsp. salt
  11. 1 tsp. sugar
  12. 1 can coconut milk, 14oz.
  13. a few sprigs of cilantro/coriander/dhania leaves

METHOD

  1. See recipe for preparing the Fried Tofu When fried, keep aside
  2. Break noodles into 4" pieces, (just so it is easier to handle). Boil in salted water, 5-7 min.
  3. When tender, drain in colander & keep aside
  4. Wash & slice onions. Peel & chop garlic or use store bought crushed garlic
  5. Heat oil, stir fry onions and garlic for about 3 minutes
  6. Add spices, 7,8 & 9. Blend with onion mix
  7. Pour coconut milk into onion mix, bring to boil & simmer on low temperature for about 4 min.
  8. Add tofu and noodles. Stir contents, simmer for a minute. Switch off heat
  9. Garnish with chopped coriander leaves.
  10. Serve immediately, preferably with a green salad to accompany this rich dish

Tofu, coconut milk and noodles are available at most regular supermarkets. If you have trouble finding these ingredients, you may find them at ethnic stores.
