Vegan Peanut Butter Pie

Here is another recipe from Amber Barrett. She used to be my grandson's nanny. Apart from being a caring and very efficient nanny, Amber has many skills and interests. One of them is cooking. I have enjoyed the delicious fare that Amber creates.

Here is her recipe for Peanut Butter Pie. One of the ingredients that Amber has used, is, gluten free cookies that are similar to Oreo cookies. She also uses Vegan Butter. If you prefer to use the regular Oreo cookies, & butter, the recipe should still work.

  1. About 18 Oreo cookies, (Amber used glutino chocolate sandwich cookies, which look like Oreo's & are very similar in taste)
  2. About 3 tblsp. melted butter, (Amber used vegan butter)

Crust Directions

  • Place Oreo's in food processor with melted butter. Pulse till well mixed
  • Place in pie pan, or 9 in spring-form pan. Use fingers and spread out evenly
  • Bake at 350° for 10 minutes
  • Cool for at least an hour or so


  • 2 cups peanut butter
  • 1 lb. silken tofu
  • ½ cup agave nectar


  • Place all ingredients in food processor. Turn on till smooth
  • After crust has cooled, pour filling onto crust
  • Refrigerate overnight; for firmer pie, freeze for 2-3 hours before serving
  • For decoration and garnish, Amber topped the pie with chocolate sauce and a few pieces of chopped roasted peanuts
  • It was yummy
