It was a pleasure for me to have met my niece for the first time in January 2014. Due to my move to cities away from my family, I lost contact with many of my family members.

Anusha's late mum, Chamawathi Parsotham was my first cousin. Anusha is the third of 5 children. Her parents are very dear to her because of the values they instilled in her.Having worked in clerical positions and as a hairdresser, Anusha is now a stay at home mum. She loves to cook, bake and entertain. Scrabble is her favourite board game. Anusha enjoys her role as a wife and as a mother, to a handsome 22 year old son who is studying mining engineering. She is a very friendly person who loves meeting people and socializing.

Here is Anusha's recipe for Butter Biscuits.


INGREDIENTS

  1. 1 cup self raising flour
  2. 1 cup butter
  3. About ½icing sugar/confectioners sugar
  4. ½ cup maizena/cornflour
  5. 1 tsp. vanilla essence
  6. A pinch of salt
  7. You may add about 2 tblsps. coconut for crunch, (optional)

METHOD

  • Mix butter and sugar. Beat until you get a creamy texture
  • Add maizena/cornflour
  • Follow with salt and flour
  • Blend until you get a soft dough
  • Make small balls, then flatten into round shapes. Place on baking tray and press lightly with the back of a fork
  • You may get about 30 biscuits. Bake at 160°C./320°F. until light brown
  • It is ready to be served once it is cool
