Black Velvet Cake

This is another recipe by Vadachia, from Verulam, South Africa. This recipe was given to her by her meditation tutor at the Brahma Kumari Center. There is also a recipe for icing/frosting. This is optional. Skip this step if you are trying to cut calories. I find that spreading butter on a cake like this, accompanied by a cup of hot tea is really, really delicious, without the frosting.

The recipes seem so simple to do, yet delicious. I plan to try them very soon. If anyone beats me to it, please send me pictures which I can add to this recipe site.

Please note that some product names may differ from what is available in other countries, for example icing sugar is also known as powdered sugar. Castor sugar is really sugar that is refined. You may run your regular sugar in the coffee grinder and get a fine sugar which is castor sugar. It helps to dissolve faster in the baking process. It is sometimes called Bakers Sugar.

INGREDIENTS

  1. 1½ cups cake flour
  2. ½ cup brown flour
  3. ½ cup cocoa
  4. 1½teaspoon baking powder
  5. 1 teaspoon bicarbonate of soda/baking soda
  6. 2/3 cup oil
  7. 1 cup sugar
  8. 1½cups water

Method

  • Mix all ingredients well. Pour in glass Pyrex dish 30x20cm (tray)
  • Bake at 180° Celsius/ 400°F. for approximately 20-30 minutes until done (test with wooden skewer or fork)
  • Allow to cool

Ingredients for Icing/Frosting

  • 1 large mug of sifted icing sugar
  • Two heaped teaspoons cocoa
  • ½ teaspoon butter
  • 1 mug boiling hot water,(see notes below)

METHOD

  • Pour mug of boiling hot water slowly & carefully into the icing ingredients stirring with long teaspoon or dessertspoon
  • Pour over cold cake, using the back of spoon or spatula to spread
  • Cool cake, preferably in the fridge
  • Serve with a blob of cream on individual pieces

I found that using I mug of water was way too much. I suggest about a ¼ cup of water. The best thing is to pour water gradually and not all at once. That way u can still adjust if it needs more.

If Vegans want to make the frosting, just substitute the butter for vegan butter
