Indira is the wife of my first cousin, Ishwar Sewpaul. They have 4 adult children in successful careers and are proud and happy grandparents as well. They live in a large home on a farm in Natal. Fresh fruit and vegetables grow on their property. It is always interesting to visit them and on most occasions we come home with loads of garden fresh, fruit and vegetables.

Indira is a very caring mother and enjoys taking care of her family. She is an excellent cook and host. On several occasions we have been guests at Indira's home and have always been entertained with delicious food.

Indira's, Chicken Peri-Peri, uses a chili sauce made of spicy chilies called Peri-Peri. If you are unable to get Peri-Peri Sauce, please substitute with a spicy sauce that you are familiar with. Follow the rest of the recipe to enjoy this dish. Here is Indira's recipe for Chicken Peri-Peri



INGREDIENTS

  1. Chicken pieces of 1 whole chicken
  2. 2 tomatoes
  3. 5ml Peri peri sauce
  4. 5ml each, ginger & garlic
  5. 25ml tomato sauce
  6. 1 onion
  7. 2 green chilies
  8. 5ml cumin powder
  9. 5ml salt
  10. 100g margarine/butter

METHOD

  • Wash and Drain Chicken
  • Liquidize together, onions, tomatoes, green chillies, ginger & garlic
  • Pour liquidized mixture into a dish, add chicken pieces
  • Combine with peri peri sauce, tomato sauce, cumin powder & salt. Mix well
  • Marinate for ½ hour
  • Set oven to grill/broil
  • Melt margarine/butter in a roasting pan. Place marinated chicken in it
  • Grill chicken until golden brown. At this stage, carefully turn to grill the other side
  • Remove from oven when the other side is also golden brown
  • When cool, serve with accompaniments like bread and a green salad
