Kalyani's Oven Roasted Baked Potatoes

These potatoes are soft & warm, tasty and almost melt in your mouth. It is one of my favorites of Kalyani's dishes. You may exclude the butter and cream, or use low fat varieties instead.

Take care when removing the hot tray of potatoes from the oven & when slicing the hot potatoes. Baking time depends on the size and the quality of the potatoes, but a good guide is that it takes about an hour to bake. It should be soft to the touch when the potatoes are poked with a skewer or butter knife.

Serve these potatoes with a green salad & garlic bread for a light yet satisfying meal or as an accompaniment to a main dish. It also makes a delicious appetizer.

INGREDIENTS

  1. 8 medium size baking potatoes, scrubbed & unpeeled
  2. 4½ cups of sour cream
  3. salt to taste
  4. 3 tblsp. butter
  5. 1 cup grated cheddar cheese
  6. ground black pepper
  7. chopped chives

METHOD

  • Scrub potatoes with crushed foil. Remove any blemishes & lay on an oven tray.
  • Heat oven to 400 degrees F.temperature. Bake for almost an hour, turning occasionally
  • Test softness with a knife or skewer. Switch off oven & leave potatoes in hot oven for about 10 min before removing.
  • When cool to the touch, split potatoes lengthwise & scoop soft center, leaving a narrow shell of potato in the potato skin.
  • add ingredients 2-4 & mix well. Taste and adjust amounts of 2-4
  • Top with cheddar cheese
  • Return to hot oven at 400 degrees until cheese melts
  • Serve hot, with sprinklings of black pepper & chopped chives
