Pam is a professional nurse and mother of 3 sons. Despite a busy work schedule, Pam loves to take care of her family and home. She is an enthusiastic gardener and has a talent for decorating and always finding bargains. Both Pam and her husband Rajan enjoy entertaining family & friends with good food, drinks and music.

At a recent Potluck hosted by Pam and Rajan, there was an excellent array of food. Many of these items were prepared by Pam. Her Dhall received rave reviews from many guests. Pam kindly shared the recipe, which is described below.

INGREDIENTS

  1. 2 cups pea dhall
  2. ¼ tsp. turmeric powder
  3. 6 cloves garlic
  4. 30mls. olive or vegetable oil
  5. 3 or more green chilies: 1 tblsp. butter
  6. 1 sliced medium onion & a few strands of curry leaves
  7. less than ¼ teaspoons each of urad, cumin, mustard, & methi (fenugreek) seeds
  8. ½ tsp. powdered Hing (asoefaetida)
  9. salt to taste; cilantro for garnish

METHOD

  • Clean & wash dhall, then add to about 8 cups of water. Boil on medium-high temp.
  • Add garlic, turmeric and salt while dhall is boiling. Continue cooking & stir occasionally until a smooth consistency is reached. Add more water if it appears too thick. Set aside
  • In a separate pan heat oil. Add all the seeds in number 7 followed with butter
  • Keep lid on as seeds will splutter. Add green chilies, curry leaves and onion. Stir contents & sauté until brown
  • Add Hing & mix. Now add contents of pan to dhall and bring to boil. Add 1 cup water if you want it to have a thin consistency
  • Adjust for salt. Garnish with cilantro
  • Serve with rice and curries, or as a soup, just by itself

For those not familiar with making dhall, please note that the lid should be off the pot when boiling dhall on a high temperature. The contents will spill over if the lid is on. Once it is on a lower temperature you may keep the lid on or have the lid on partially .
