Poha Cutlets

Chhaya Shah, my friend kindly shared her recipe for Poha Cutlets. We met when we both lived at the same apartment complex in Kansas, several years ago. Over the years Chhaya has introduced me to several interesting dishes, including burritos, sabhudhana, mixed pepper curry and most recently Poha cutlets. Here is another delicious, easy &. quick recipe from Chhaya for Sautéed Bell Peppers. Other recipes from Chhaya will be featured as well.

She is a devoted mother and she works with little children at a pre-school. She enjoys cooking and mentioned that Poha cutlets is one of the favorite foods of her daughter. These cutlets are made from the flaky rice grains, Poha. Click on this link which briefly describes,

Chhaya informed me that these cutlets are often served at Gujerati wedding breakfasts.


  1. 1 cup Poha flakes
  2. 1 tbslp. lemon juice
  3. 2 tblsp. cornstarch
  4. ¼ tsp. turmeric powder
  5. 1 tsp. each, coriander & cumin powders
  6. ½ tsp. salt
  7. ¼ tsp. sugar
  8. ½ cup chopped cilantro/coriander/dhania leaves
  9. ½ cup oil


  1. Soak Poha in water for at least 15-20 min., until the flakes are soft
  2. Drain in colander & keep aside
  3. Wash cilantro leaves, and chop
  4. To drained Poha, add the spices & other ingredients. Mix to form a dough.
  5. Make shapes, oval or round
  6. Heat oil, fry cutlets until they are light brown. Turn to fry the other side
  7. Serve with chutneys or ketchup

Adding a boiled mashed potato to the Poha flakes when creating the dough is another variation of this cutlet. You may also choose to add a frac14;cup finely chopped onion, & a ¼ tsp. crushed ginger. Poha may be purchased at most Indian grocers.
