Delicious Tea Cookies

These cookies are from my delightful young friend, Ania Shreeve. She has many talents and is wonderful artist as well. To view some of her work, check out, Ania's Website.

Ania loves to read and explore new places. She makes the best of being in a new country and finding resources that nourish her interests. She is also an excellent cook and has provided us with some interesting meals. She kindly contributed this recipe which will make a perfect treat for Valentine's Day, with its heart shape



INGREDIENTS

  1. 2 cups flour
  2. 1/3 cup sugar
  3. ½ tsp. baking powder
  4. ½ tsp. salt
  5. 2 eggs
  6. 1½ stick of unsalted butter to make ¾ cup soft butter
  7. jam
  8. 2 heart shape cookie cutters, 3" & 1½"
  9. Milk, just enough to help stick shapes together after they have been cut,(not to be used in forming dough)

METHOD

  • Mix all dry ingredients. Add soft butter and mix, followed by eggs. Mix well
  • Form a smooth dough and roll out quite thinly (thickness of a pasta dough)
  • If dough sticks while rolling, sprinkle a dusting of flour
  • Cut out heart shapes with large cookie cutter
  • Lay half the shapes in baking tray
  • Use the smaller heart shape to cut out a heart shape in the center of the rest of the large heart shapes
  • Brush the large heart shapes with a dab of milk to moisten. Then place dough with the empty heart center on top of each heart shape in the baking tray
  • Fill this space with a approximately 1 teaspoon of red raspberry jam
  • Bake at 350° oven for abut 15-20 min.
  • Remove when a light golden color
  • While still warm sprinkle with with powdered sugar

Delicious Heart Shape Tea Cookies with Jam



Ania reminds me that these cookies may be made in any shape. Around Christmas use the star or tree shapes. Have fun with it. If you really want to take the easy way out, just make simple round shapes and press in your thumb to create a hollow, which can be filled with jam. You may use any flavor of jam that you prefer. Raspberry jam was used in Ania's recipe.

Ania usually uses unsalted butter whenever she bakes. However if you choose to use salted butter, reduce the amount of salt in the recipe. This dough also freezes very well, should you want to bake small batches at a time.
