Do you find that just when you plan to make a certain dish, you don't have all the ingredients that are listed. We may decide to find another recipe or try to substiute with other ingredients. When I put aside a recipe, most times I forget about it and do not get back to it.
Especially during the festive season a lot of us are looking at cooking and there are times that we don't have what the recipe asks for. I recently found a full page newspaper guide, (that I had saved all these years) that included what they describes as Emergency Substitutions. I am including a part of the list and will continue with the rest of the list on an ongoing basis.The information was listed in a newspaper published in Star Tribune in Minneapolis St. Paul on Thursday, January 11, 2001
This list is about substituting cooking and baking ingredients.

Buttermilk | 1 cup milk plus 1 tblsp. lemon juice(wait 5 min) |
Sifted cake flour | 1 cup minus 2 tblsps sifted all purpose flour |
1 oz unsweetened chocolate | 3 tblsps unsweetened cocoa plus 1 tblsp butter |
1 oz unsweetened chocolate | 1 & 2/3oz semi sweet chocolate. Reduce sugar in recipe by 2 tsps |
1 tblsp cornstarch | 2 tblsp. flour |
1 cup light corn syrup or honey | 1 ¼ cup sugar plus 1/3 cup liquid | 1 clove garlic | ¼ tsp garlic powder |
1 cup half & half | 7/8 cup milk plus 3 tblsps melted butter |
1 cup heavy cream | ¾ cup milk plus 1/3 cup melted butter |
1 tblsp fresh herbs | 1 tblsp dried herbs |
1 cup whole milk | ½ cup evaporated milk plus ½ cup water, or 1 cup skim milk plus 2 tsp melted butter |
¼ cup chopped onions | 1 tblsp dried minced onion |
½ cup wine (in desserts) | ½ cup fruit juice |
½ cup wine (in cooking) | ½ cup broth |
broth | Use the same amount of water |
