Vinuthna Vattikonda

Vinuthna or Vinu as she is known by friends and family is a charming, modest young lady that I have had the pleasure of meeting almost 2 years ago. Vinu is from India but has been living in the United States for several years. She has a computer science degree and holds a very responsible job at a school of pharmacy. She is the head of the information technology department of this campus.

She works long hours & is dedicated to giving a quality performance. In spite of all these responsibilities Vinu is always, polite, caring and friendly. She and her husband share a caring relationship. Vinu is also an excellent cook. She often makes Dosa, & lucky me, she sends me part of her batter.

Here is Vinu's recipe for Dosa


INGREDIENTS

  • 1 cup of urad dal
  • 2 cups of rice
  • 4-5 table spoons of poha / boiled rice
  • Cold water to soak ingredients
  • 2 teaspoons salt
  • oil for frying batter

METHOD

  • Pick lentils to remove dried lentil or any debris. Rinse rice and dhal & then soak in water for 8-10 hours
  • Drain water and pulse ingredients in food processor until a paste like texture develops.
  • Heat pan on medium to high temperature. Take a spoonful of batter & pour in center
  • Working quickly move spread batter in circular motions to fill pan. Pour oil around the edges & let it cook until golden brown
  • Repeat until the batch you want is complete

The ingredients in this recipe may be purchased at Indian & Asian grocery stores. For variety Vinu suggests that you may take half the batter in a separate container & add grated carrots, cut pieces of chili, ginger, cilantro, onion ½ teaspoons of cumin seeds & salt. Follow the same method to cook the batter.

Refrigerate left over batter for use again. You may halve the measurements if want a small amount of dosa.
