Meet lovely Sunita Sewpal, mother of 2 gorgeous children.

Sunita introduced me to Burfi Swiss Roll. Having never heard of Burfi Swiss Roll, I was very curious about this new dish. Sunita kindly forwarded her the recipe. Do try it.


Sunita's Burfi Swiss Roll

INGREDIENTS

  1. 500g. Klim powder
  2. ½ cup milk
  3. 2 tblsp. ghee
  4. 2 tblsp. ghee (no, not repeated in error
  5. 1 cup sugar
  6. 1 can condensed milk
  7. 1 tsp. vanilla essence
  8. 1 cup chopped mix of almonds & pecan nuts
  9. 1 cup fresh cream, (also known as whipping cream)
  10. ½ cup chopped glaced cherries (green,red,yellow)
  11. 3 tblsp. flour

METHOD

  1. Mix klim with fresh cream and leave aside
  2. Braise 2tblsp. ghee with 3tblsp. flour. Cook 3-4 minutes. When cool add to klim mixture & mix well.
  3. Pulse klim mixture in food processor until it resembles fine bread crumbs
  4. Pour milk into a pot, add sugar. Allow to simmer on medium heat.
  5. Once it bubbles, add ghee (#4), & cook for 5 minutes, then remove from heat
  6. Add the condensed milk & mix well
  7. Add klim mixture & cook on low heat until it starts to thicken. Once it leaves the side of the pot, switch off stove
  8. Place a sheet of foil on the table, pour mixture over. Sprinkle with chopped almonds or pecan nuts and cherries
  9. Roll into swiss roll, when ready to serve cut diagonally into slices

Please note that if you do not have the brand of milk powder used by Sunita, use any brand of full cream milk powder that is available where you live. Sunita has used vanilla flavor, but you may use other flavors if you prefer.
