Desiré's Double Chocolate Cherry Cookies

These cookies, also gluten free, are another favorite of Desiré. The ingredients, almond flour & dark chocolate are healthful as they contain anti-oxidants and cholesterol lowering properties. The recipe yields 24 cookies. The original recipes were obtained from, The Gluten-Free Almond Flour Cookbook: Breakfasts, Entré's and More.

Desiré has made some changes to the recipe. So consider her tip. She uses a little less of the agave nectar and grape seed oil. In addition she adds about ¼ cup of all purpose flour to make up the full amount of flour, otherwise the mix is a bit too soft.

INGREDIENTS

  1. 2 & 3/4 cup blanched almond flour
  2. ¼ cup unsweetened cocoa powder
  3. 3/4 cup agave nectar
  4. ½ cup grape-seed oil
  5. 1 tblsp. vanilla extract
  6. 1 cup coarsely chopped dark chocolate (73% cacao)
  7. 1 cup dried, fruit-juice-sweetened cherries
  8. ½ tsp. bicarbonate of soda/baking soda
  9. ½ tsp. sea salt

METHOD

  • Pre-heat oven to 350°F. Prepare 2 large cookie sheets by either lightly spreading a little butter or using parchment paper
  • Mix together the dry ingredients: cocoa powder, almond flour, salt, baking soda
  • In a separate container whisk vanilla extract, agave nectar & grape seed oil
  • Add this whisked mix to the almond flour mix & blend
  • Add the cherries & chocolate. Mix well
  • Drop a full tablespoons of dough onto greased cookie sheets allowing space for expansion between cookies
  • Bake for 10-15 min. The tops should look dry and begin to crack. Remove from oven & allow to cool for at least 20 minutes
