Kam's Hot Roasted Jacket Baked Potatoes with Pesto

The potatoes are baked in a hot oven.

Take care when removing the hot tray of potatoes from the oven & when slicing the hot potatoes. Potatoes baked in an oven certainly taste really good. However if you are in a hurry or you want to conserve electricity, then do try the microwave version. Most microwaves can bake a potato in 5 minutes. Follow the steps for the rest of the recipe.

If you do not have basil leaves, try spinach leaves instead. The spinach pesto is tasty as well. Again follow the steps to make the pesto. Make sure you rinse the spinach under running water

Serve these potatoes with a green salad & garlic bread for a light yet satisfying meal or as an accompaniment to a main dish.

INGREDIENTS

  • 6 large baking potatoes, scrubbed & unpeeled
  • 4½ cups basil leaves, washed, drained and torn
  • 2 tblsps. pine nuts
  • 1 cup freshly grated Parmesan cheese
  • 3 tblsps. olive oil

METHOD

  • bake potatoes in a hot oven for almost an hour,turning occasionally
  • grind basil leaves & pine nuts in a food processor until mixture is thick & smooth
  • add ¾ of cheese and process a few more minutes
  • add olive oil while machine is still running until pesto is smooth & well mixed.
  • remove pesto & keep aside
  • remove hot potatoes from over when it feels soft
  • slit lengthwise and fill with generous amounts of pesto
  • serve hot with sprinklings of Parmesan cheese
