The recipe for melktert was submitted by my friend Mary Brum, a former South African, now living in the USA. Mary works full time, loves the outdoors and to explore places of interest. Together with her husband, Greg, they have enjoyed several interesting trips overseas and locally.

Mary is very health conscious and selects food with nutritional value. She juices fruits and vegetables, making interesting drinks for Greg & herself. She cooks tasty food but with limited amounts of oil and rich, calorie laden food. We look forward to more of Mary's recipes on healthy fare.

For the occasional pot lucks Mary considers the tastes of her not so health conscious buddies and often brings treats such as Koeksusters, (a kind of donut) and other regular food. Her melktert recipe is also one of those that she would make for others & most likely just a tiny taste for herself. Her treats are always yummy, so you can be assured of a delicious melktert with this recipe.



INGREDIENTS

  1. 1 cup cake flour
  2. 1 teaspoon baking powder
  3. 1/4 teaspoon salt
  4. 1 teaspoon vanilla extract
  5. 4 cups milk
  6. 3 egg whites
  7. 3 egg yolks
  8. 1 tablespoon cinnamon sugar
  9. 3 tablespoons butter, melted
  10. 1 cup white sugar

METHOD

  • Preheat to 375 ° F (190 °C). Coat a 9 inch deep dish pie plate with vegetable oil cooking spray
  • In a large bowl, mix together the butter & sugar until smooth
  • Add the egg yolks and beat until light and fluffy
  • Sift in cake flour, baking powder & salt. Stir until well blended. Mix in vanilla & milk
  • In a separate bowl, whip egg whites to stiff peaks using an electric mixer
  • Fold into batter, then pour into the prepared pie plate
  • Sprinkle cinnamon sugar over the top
  • Bake for 25 minutes in preheated oven, then reduce the temperature to 325 °F.
  • Continue to bake for 25 to 30 minutes, or until the center is set when you gently jiggle the pie. Serve hot or cold.
