CHEDDAR-ONION CHIVE SCONES

Mary's Cheddar-Onion Chives Scones Recipe is another delicious treat that can be enjoyed at breakfast or anytime you want a snack with coffee or tea. You will note that Mary uses yogurt instead of cream as one of the ingredients. If you are not watching your calories and occasionally have rich ingredients, you may want to use the cream. Either way it is sure to be delicious



INGREDIENTS

  1. 3 cups all-purpose flour
  2. 1 tablespoon baking powder
  3. 1 teaspoon salt or to taste (remember cheese is salty as well)
  4. Pinch of Cayenne Pepper – add more if you like it spicy
  5. 1/2 cup finely chopped fresh chives (can use green onions if chives are unavailable)
  6. 5 oz extra-sharp Cheddar, coarsely grated (1 1/2 cups) – must be extra sharp cheddar
  7. 2 cups heavy cream plus additional for brushing (Mary uses plain yoghurt and 1 pinch of baking soda instead – healthier)

METHOD

  • Preheat to 400 ° F
  • Whisk together flour, baking powder, & salt. Add chives & Cheddar, tossing to combine
  • Stir in cream with a fork until a sticky dough forms
  • Turn dough out onto a lightly floured surface and knead 8 times with floured hands
  • Halve dough & form each half into a 7-inch round. Brush tops of rounds with additional cream & cut each into 8 wedges
  • Sprinkle some cheddar on each scone before baking
  • Arrange wedges about 1/2 inch apart on an un-greased large baking sheet & bake in middle of oven until golden brown, about 20 minutes
  • Cool on a rack. Store leftovers in the refrigerator & reheat in toaster – split in 2 halves for 2 minutes or until lightly brown
