Broccoli-Noodle Casserole

Another popular dish from Viola Pace. Although broccoli is the ingredient used in this recipe, Viola suggests that you may substitute the same amount of broccoli for any other vegetable.

Broccoli-Noodle Casserole

INGREDIENTS

  1. 2 packages 10oz. frozen broccoli
  2. 8 oz. medium egg noodles
  3. 1 can cream of Mushroom Soup
  4. 1 cup grated sharp cheddar cheese
  5. ½ cup mayonnaise
  6. 2 tblsps. minced onion
  7. ½ cup milk
  8. 1 cup Cracker crumbs
  9. 2 tblsp. butter

METHOD

  • Heat to boiling 1 cup water - add ½ tsp. salt
  • Add broccoli. Cover & heat to boiling until stems are almost tender (10-12mins.)
  • Drain. Place broccoli in un-greased 1½ quart casserole
  • Heat oven to 400°
  • Beat soup and milk with hand beater until smooth. Pour over broccoli
  • Sprinkle with cheese
  • Mix butter and cracker crumbs & sprinkle over broccoli
  • Bake until crumbs are light brown, about 20min.
  • When cool serve with a green salad on the side
